Seasonal menus are enriched by foraged goods. Pure and wild flavors are brought together by Daanius Aas, who was awarded the Michelin Young Chef Award in 2023. The team strongly believes in a sustainable approach to food preparation and avoiding wastefulness, encouraging guests to make more conscious choices and keeping an open mind regarding ingredients in their entirety.

“Hiis Restoran OÜ launch project” is Co-Funded by the European Union Cohesion Policy funds 2021-2027 in the amount of 20 000 €.

The project focuses on adding value to Estonian produce and serving it at fine dining level during a sustainable and nature-centric dining experience. Restaurant Hiis uses local produce and follows the principles of the circular economy by reducing waste and supporting domestic small businesses. In this way the restaurant contributes to increasing resource productivity in an efficient way. The project also contributes to creating new jobs while respecting gender equality principles.
